Grass Fed Retail Halves and Wholes

  

At The Steel Buffalo Butchery, we offer the opportunity to purchase half and whole beef options to help you stock your freezer with high-quality, grass-fed meat. We strive to simplify the process for our customers and provide detailed information to enhance your understanding of what to expect when buying beef in bulk.


Understanding the Process:


  1. Live Weight: When purchasing beef, it's important to know that not all cows are the same. The live weight of a cow will significantly determine the portion sizes of your cuts and the marbling of the meat. Marbling, which refers to the fat interspersed within the muscle, affects the tenderness and flavor of the meat when cooked.
     
  2. Weight Range: All of our beef comes from Angus cattle, with live weights ranging from 1,100 to 1,300 pounds. These cattle are grass-fed and raised on NON-GMO ingredients, sourced from a single farm in Georgia to ensure consistency and quality.
     
  3. Pricing Structure:
     
    • Our pricing is estimated based on an average live weight of 1,200 pounds. However, please note that individual animals may weigh slightly more or less.
    • The prices provided are estimates and not fixed, as the final cost will be based on the actual hanging weight of the cow. The hanging weight is determined after the animal has been dressed (skinned and gutted) and typically represents about 58% of the live weight.
    • Your final yield weight, which refers to the amount of meat you'll receive, will be approximately 60% of the hanging weight.

Example: Calculations on a half/whole cow: 

Live Weight Whole Cow = 1200lbs 

Whole Cow Hanging Weight = 696lbs 

½ cow hanging weight = 348lbs. 

½ cow Yield Weight (Take Home) = 208lbs 


Our pricing is based on Hanging Weight @ $6.10lb. Based on these numbers a ½ cow will cost you roughly $2,122.80 (Double these amounts for whole cow orders.)

Ordering and Cut Selection

  

To place an order, you can give us a call or come visit us in our store. You will pay a deposit of $200.00 and receive your beef in about 4 weeks depending on availability. 


You can download a cut sheet or we will send you one once order is received.  

  •  Any cuts that are not selected from the Steak & Roast selections will be turned into more ground beef. The more selections made, the less ground you will receive. 


  • If you would like to have Stew Meat, Cube Steaks, or Stir Fry, you can choose to have your London Broil, Eye of Round, Bottom Round, or Sirloin tip turned into these options. 


  • Offal request can be made for the Liver, Heart, tongue, Oxtail. Bones & Fat can also be saved
